Chicken groundnut soup: The recipe
Chicken Groundnut Stew, also known as Groundnut Soup, is a staple food in Western Africa, particularly in Ghana. Ingredients for Chicken Groundnut Soup:
- 1 cup of groundnut paste (peanut paste)
- 2 medium-sized onions, chopped
- 3-4 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 2-3 fresh tomatoes, blended into a puree
- 2 tablespoons tomato paste
- 1-2 Scotch bonnet peppers or hot peppers (adjust to your preferred spice level)
- 1 teaspoon ground cayenne pepper (optional, for extra heat)
- 1-2 cups of water or chicken broth
- 1 to 1.5 pounds of chicken pieces (thighs, drumsticks, or breast), skinless and bone-in
- Salt and pepper to taste
Instructions for Simplified Chicken Groundnut Soup:
1. Prepare the Chicken: Season the chicken pieces with salt, pepper, blended ginger, garlic, onions and scotch bonnet pepper. Add your fresh tomato, bulb on onion, stock cube and any chicken seasoning of your choice. Add your tomato paste and mix. Add 1 cup of water depending on the amount of chicken, steam the mixture till it stews.
2. Add Groundnut Paste: In a separate pot, mix the groundnut paste with warm water and drain the mixture for a fine solution. If the mixture becomes too thick, add water and let it cook till it reduces and oil starts to form.
3. Remove the onion and fresh tomato and blend till a smooth paste. Drain the puree into the pot of chicken and add your groundnut paste to it.
4. Simmer the mixture: Pour in 4-6 cups of water to cover the chicken and create the desired soup consistency. Add the Scotch bonnet peppers, cayenne pepper (if using), and salt to taste. Stir well.
5. Simmer: Let the soup simmer with the chicken for about 30-40 minutes until the chicken is cooked through and tender. Stir occasionally and add more water.
Do not cover the soup completely to avoid making it go bad or spilling over.
